Viscosity monitoring for crusher

We have a crusher. It has 300 litres of oil lubrication tank fitted with forced lubricating system.

We have interlocks to stop the crusher

- by float switch if the oil flow is stopped

- temperature switches to stop the crusher if the oil temperature goes above preset value.

Since viscocity also plays a major role , can anybody suggest an online viscocity monitoring gauges. If the viscosity is changed by any means ( like water mixing etc. ), it should switch off the machine to save it from seizing and costly breakdowns.
