I am currently trying to run a food product on a double drum dryer with a nip feed. The drums are about 1.5 m in diameter and 1.5 m long. I have tried for a few months varying all operating parameters (rotation speed, puddle height, steam pressure, gap width) and the product sticks to the drum and doesn't release at the doctors knife creating a very fine powder and not a cohesive sheet. I have tried many additions to the feed such as starches, gums, sugars and the like, but nothing seems to work well. Our feed is usually around 17%-20% solids by weight.
We are also trying to run a new product that has 2-3% ZnSO4 (dry product weight) added to the feed before drying and this addition of the zinc seems to exacerbate the problem. It would be great if anyone could offer some insight into this problem. ■
